In a medium saucepan, combine sake and 1/4 cup of white sugar. Heat over medium, stirring until sugar is fully dissolved. (Approx. 5 minutes)

Add soy sauce, 1/3 cup white sugar, orange marmalade, rice vinegar, garlic powder, sesame oil, ground ginger, cayenne pepper, and black pepper to the saucepan. Stir well to combine all ingredients. Bring the mixture to a gentle boil, then reduce heat to a simmer. Allow the sauce to reduce slightly, stirring occasionally. (5-10 minutes)

In a small bowl, whisk together cold water and cornstarch until the cornstarch is completely dissolved, forming a slurry.

Gradually drizzle the cornstarch slurry into the simmering teriyaki sauce, stirring constantly. Add the slurry 1-2 tablespoons at a time until the sauce reaches your desired thickness. Once thickened, remove from heat and allow to cool before using or storing.

For a deeper, richer flavor, use dark brown sugar instead of white sugar.
Freshly grated ginger can be substituted for ground ginger. Use about 1 tablespoon of grated ginger.
Adjust the amount of cayenne pepper to control the level of spice.
The sauce can be stored in an airtight container in the refrigerator for up to a week.
For a smoother sauce, strain it through a fine-mesh sieve after cooking.
