Follow The Directions

01

Step

In a medium saucepan or Dutch oven, heat the olive oil and butter over medium heat until the butter is melted and the mixture is shimmering. (2 minutes)

02

Step

Add the sliced onion and minced garlic, cooking until softened and translucent, about 5 minutes. Stir frequently to prevent burning.

03

Step

Add the sliced mushrooms and sauté until they release their moisture and become tender and lightly browned, about 8 minutes. Stir occasionally.

04

Step

Pour in the beef broth, water, and red wine. Stir in the tomato paste and season with freshly ground black pepper to taste.

05

Step

Bring the mixture to a simmer, then reduce the heat to low and cook until the flavors have melded and the soup has slightly thickened, about 10 minutes. Stir occasionally.

06

Step

Ladle the soup into bowls and garnish with grated Parmesan cheese and chopped fresh parsley. Serve immediately.

For a vegetarian option, substitute vegetable broth for the beef broth.
To enhance the mushroom flavor, consider adding a teaspoon of dried thyme or a bay leaf during the simmering process. Remove the bay leaf before serving.
A swirl of heavy cream or a dollop of sour cream can add extra richness to the soup, if desired.
For a smoother soup, use an immersion blender to partially or fully purée the soup before garnishing.
