In a medium saucepan with a tight-fitting lid, bring water and salt to a boil over medium heat. (Approximately 5 minutes)

Add quinoa, cover, and reduce heat to low. Simmer for 15 minutes, or until all liquid is absorbed.

While the quinoa is cooking, whisk together coconut milk, sugar, eggs, and lime juice in a separate bowl.

Once the quinoa is cooked, stir in the coconut milk mixture. Return the pan to medium heat and cook, stirring constantly, for 5-7 minutes, or until the pudding has thickened to your desired consistency.

Remove from heat and stir in lime zest and vanilla extract.

Allow the pudding to cool to room temperature, then transfer it to the refrigerator and chill completely. (At least 2 hours, or preferably overnight)

Spoon the chilled pudding into serving bowls and garnish generously with coconut whipped cream, chopped fresh mango, and toasted coconut flakes. Serve and enjoy!

For an extra layer of flavor, try toasting the quinoa lightly in the saucepan before adding the water. This will bring out its nutty notes.
If you prefer a sweeter pudding, adjust the amount of sugar to your liking.
The pudding can be stored in an airtight container in the refrigerator for up to 3 days.
Consider adding a pinch of ground ginger or cardamom for a warming spice element.
