For a spicier soup, use hot Italian turkey sausage or add a pinch of red pepper flakes along with the garlic.
Squeezing the thawed spinach dry helps to prevent the soup from becoming watery.
Taste and adjust seasonings as needed. You may need more salt and pepper depending on your preference and the sodium content of your chicken stock.
This soup tastes even better the next day, as the flavors have a chance to meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
