Ensure your candy thermometer is accurate for the best results. The correct temperature is crucial for achieving the right texture.
If you prefer a different nut, almonds or walnuts can be substituted for pistachios.
Don't skip the blooming of the gelatin. This allows the gelatin to properly dissolve into the orange juice.
Be patient during the simmering process. The mixture will become very thick, and the color will change from opaque to translucent. Keep whisking constantly to prevent lumps.
