For a smokier flavor, use smoked paprika in place of the regular paprika. If you prefer less heat, remove the seeds and membranes from the jalapeño before slicing. To make ahead, assemble the casserole in the slow cooker and refrigerate overnight. Add an extra hour to the cooking time. This casserole can easily be doubled to feed a larger crowd. Use a larger slow cooker if needed.
