For a smoother curry, you can lightly mash some of the chickpeas before adding them to the pot. Adjust the amount of cayenne pepper to your preferred level of spiciness. Fresh ginger and garlic can be used in place of the paste. Simply mince them finely before adding to the pot. Serve hot, garnished with fresh cilantro and a dollop of vegan yogurt (optional).
