(Cook time: 10 minutes + ~10-15 minutes)

For an even richer flavor, sauté the onion and carrot in a tablespoon of olive oil in the Instant Pot before blending.
Garnish with a swirl of coconut milk or a sprinkle of fresh cilantro for an extra touch of elegance.
Adjust the amount of lemon juice to your preference. Start with 1/2 a lemon and add more to taste.
This soup thickens as it cools. Add more water or broth to thin it to your desired consistency when reheating.
