Cook the udon noodles according to package directions, stirring occasionally to prevent sticking, until they are tender but still firm to the bite (al dente), about 10-12 minutes. For an even richer flavor, consider using homemade vegetable broth.
Feel free to add other vegetables such as spinach, bell peppers, or bean sprouts.
Adjust the amount of serrano pepper to your desired level of spiciness.
Garnish with extra green onions, sesame seeds, or a drizzle of chili oil for added flavor and visual appeal.
If you don't have an oven, you can pan-fry the tofu in a little oil until golden brown.
