Follow The Directions

01

Step
5 mins

In a medium saucepan, heat vegetable oil over medium heat. Add the chopped onion, leek, celery, red bell pepper, and minced garlic. Sauté until the onion becomes translucent, approximately 5 minutes.

02

Step
1 mins

Pour in the chicken stock and bring to a boil. Stir in the grated carrot, chopped tomatoes, couscous, golden raisins, and dried currants. Season with curry powder, turmeric, salt, and black pepper. Return the mixture to a boil.

03

Step
5 mins

Reduce heat to low, cover the pan, and simmer for 5 minutes, allowing the couscous to absorb the flavorful broth.

04

Step
5 mins

Remove from heat and let the couscous stand, covered, for an additional 5 minutes to fully steam and soften.

05

Step
1 mins

Fluff the couscous gently with a fork to separate the grains. Sprinkle with sliced almonds before serving.

For a vegetarian version, substitute vegetable broth for chicken stock.
Feel free to add other vegetables like zucchini, peas, or corn.
Toast the almonds lightly in a dry pan before sprinkling them on for an extra layer of flavor and crunch.
Adjust the amount of curry powder and turmeric to your preference. A pinch of cayenne pepper can also add a nice kick.
