For an even richer flavor, use Dutch-processed cocoa powder. Don't overbake the cookies! They should still be slightly soft in the center when you remove them from the oven. Store the cooled cookies in an airtight container at room temperature for up to 3 days. For a variation, try adding chopped nuts or a sprinkle of sea salt on top of the cookies before baking.
