In a medium saucepan, combine the heavy cream, chopped white chocolate, 1 tablespoon of sugar, and vanilla bean paste. Gently heat over low heat, stirring constantly until the white chocolate is completely melted and the mixture is smooth and homogenous. (5-7 minutes)

In a small bowl, pour the boiling water and sprinkle the gelatin powder evenly over the surface. Let it sit for a minute to bloom, then stir until the gelatin is fully dissolved and the mixture is clear. Gently whisk the gelatin mixture into the warm white chocolate cream until well combined.

Divide the luscious white chocolate mixture evenly among six 1/2-cup ramekins. Cover each ramekin tightly with plastic wrap, ensuring the wrap touches the surface of the panna cotta to prevent a skin from forming. Refrigerate for a minimum of 4 hours, or preferably overnight, until the panna cotta is completely set and firm.

While the panna cotta is chilling, prepare the stewed strawberries. In a separate saucepan, combine the quartered strawberries, fresh orange juice, and 2 teaspoons of sugar. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low, cover the saucepan, and let the strawberries cook until they have softened and released their juices, forming a light syrup. (2-3 minutes). Remove from heat and allow to cool completely. Once cooled, cover and refrigerate until thoroughly chilled. (30 minutes)

To serve, spoon a generous portion of the chilled stewed strawberries over each ramekin of set white chocolate panna cotta. Garnish with a fresh mint sprig, if desired. Serve immediately and savor the exquisite combination of textures and flavors.

For a richer flavor, use high-quality white chocolate with a high cocoa butter content.
Adjust the sweetness of the stewed strawberries according to your preference. Taste and add more sugar if needed.
For easy unmolding, lightly grease the ramekins with a neutral oil before filling.
The panna cotta can be made up to 2 days in advance. Store covered in the refrigerator.
If you don't have vanilla bean paste, you can substitute 1 teaspoon of vanilla extract.
