While the panna cotta is chilling, prepare the stewed strawberries. In a separate saucepan, combine the quartered strawberries, fresh orange juice, and 2 teaspoons of sugar. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low, cover the saucepan, and let the strawberries cook until they have softened and released their juices, forming a light syrup. (2-3 minutes). Remove from heat and allow to cool completely. Once cooled, cover and refrigerate until thoroughly chilled. (30 minutes)
