Follow The Directions

01

Step

Prepare the Zucchini: Halve the zucchini lengthwise. Use a spoon to scrape out and discard the seeds. Cut the zucchini halves into roughly 1-inch chunks. (5 minutes)

02

Step

Blend the Ingredients: Transfer the zucchini chunks to a high-powered blender. Add the sugar, lemon zest, lemon juice, and mint sprigs. Puree until completely smooth. (3 minutes)

03

Step

Strain the Mixture: Place a fine-mesh strainer over a bowl. Pour the zucchini mixture through the strainer. Use a spatula to press the solids against the strainer, extracting as much liquid as possible. Discard the solids remaining in the strainer. (10 minutes)

04

Step

Chill the Base: Cover the bowl of strained liquid with plastic wrap and refrigerate until thoroughly chilled. This will take at least 1-2 hours, or even overnight for the best results. (120 minutes)

05

Step

Churn in Ice Cream Maker: Pour the chilled zucchini-lemon mixture into an ice cream maker. Freeze according to the manufacturer's instructions until you reach your desired consistency. This typically takes 20-30 minutes. (25 minutes)

06

Step

Harden (Optional): For a firmer sorbet, transfer the churned sorbet to an airtight container and freeze for an additional 1-2 hours. (120 minutes)

For a smoother texture, peel the zucchini before blending, though this isn't necessary.
Adjust the amount of sugar to your liking, depending on the sweetness of the zucchini and your personal preference.
If you don't have fresh mint, a few drops of mint extract can be used, but fresh is preferred.
Garnish with extra lemon zest or mint leaves for an elegant presentation.
