Place the marinated chicken tenders on the hot grill, reduce heat to medium, and cover. Grill until an instant-read thermometer inserted into the thickest part registers 165 degrees F (74 degrees C), approximately 4 to 5 minutes per side. (8-10 minutes)

Remove the grilled chicken from the grill and allow it to rest for a few minutes. While the chicken rests, prepare the salad base: in a large bowl, combine the torn romaine lettuce, halved cherry tomatoes, diced green bell pepper, diced cucumber, and shredded carrot. (5 minutes)

In the bowl of a mini food processor or a blender, combine the lemon zest and juice, tahini, water, garlic, and minced date. Pulse several times, adding water by the tablespoon if necessary, until the dressing reaches your desired consistency. Season to taste with salt and pepper. (5 minutes)
