Preheat your air fryer to 260°F (125°C). Place eggs on the air fryer rack or in the basket, ensuring they have enough space around them for proper air circulation. Set the timer for 15 minutes. (1 minute)

Carefully remove the eggs from the air fryer and immediately transfer them to a bowl of ice water. Let them sit for 10 minutes to stop the cooking process and make them easier to peel. (10 minutes)

Remove the eggs from the ice water, gently peel them, and slice each egg in half lengthwise. (5 minutes)

Carefully scoop out the yolks from the egg white halves and place them into a mini food processor. Add the mayonnaise, sriracha, sesame oil, low-sodium soy sauce, Dijon mustard, grated ginger, and rice vinegar to the food processor. (3 minutes)

Process the mixture until it is completely smooth and has a creamy, mousse-like consistency. You may need to scrape down the sides of the food processor a few times to ensure everything is fully incorporated. (2 minutes)

Transfer the yolk mixture to a piping bag fitted with a decorative tip, or simply use a spoon. Evenly distribute the yolk mixture into the egg white halves, filling them until they are generously heaping. (5 minutes)

Garnish the deviled eggs with a sprinkle of toasted sesame seeds and thinly sliced green onion. Serve immediately or chill for later. (2 minutes)

For a smoother yolk filling, consider using a fine-mesh sieve to push the cooked yolks through before adding them to the food processor.
If you don't have a mini food processor, you can mash the yolks with a fork and thoroughly combine all ingredients in a bowl. Ensure the ginger is very finely grated for the best texture.
Adjust the amount of sriracha to suit your spice preference. A little goes a long way!
For a more pronounced sesame flavor, lightly toast the sesame seeds in a dry pan before using them as a garnish.
These deviled eggs can be made a day in advance. Store them in an airtight container in the refrigerator.
