Preheat your air fryer to 400 degrees F (200 degrees C). (5 minutes)

Prepare the cheese and turkey: Cut Swiss cheese into six 2 1/2-inch square pieces.

Create your breading stations: In a shallow dish, combine bread crumbs, 2 teaspoons of sazon seasoning, and 1 tablespoon of flour. In a second shallow dish, combine the remaining flour and sazon seasoning. Crack eggs into a third shallow dish; whisk until yellow and frothy, then season with salt and pepper.

Assemble the turkey-cheese bundles: Take each piece of Swiss cheese and lay on top of 1 slice of turkey meat. Wrap the luncheon meat around the Swiss cheese to create a bundle.

Stuff the chicken thighs: Open up each chicken thigh and place a turkey-cheese bundle in the middle. Roll the chicken thigh around the bundle to enclose the filling.

Bread the stuffed chicken: Dip each chicken bundle in the flour mixture, ensuring it's fully coated. Then, dip it into the egg mixture, allowing any excess to drip back into the bowl. Finally, press the bundle into the bread crumb mixture, ensuring it's coated all over with the crispy panko.

Air fry the chicken: Spray the breaded chicken bundles on both sides with nonstick cooking spray. Place them, seam-side down, into the preheated air fryer. (1 minute)

Reduce the heat and continue cooking: Reduce the air fryer temperature to 380 degrees F (193 degrees C) and air fry the chicken for 15 minutes. Turn the bundles over, spray with nonstick spray, and drop the air fryer temperature to 370 degrees F (187 degrees C). Continue air frying until the chicken is cooked through, about 8 minutes.

For extra crispy chicken, consider double-breading the stuffed thighs. After the initial breading, dip them back into the egg mixture and then into the panko bread crumbs again.
Ensure the chicken is cooked to an internal temperature of 165 degrees F (74 degrees C) for safety.
Feel free to experiment with different cheeses and deli meats for the filling. Provolone and ham, or even pepper jack and prosciutto, would be delicious alternatives.
If you don't have sazon seasoning, you can substitute it with a blend of paprika, garlic powder, onion powder, cumin, and oregano.
