Serve: Drizzle some of the green crema over the cooked drumsticks and serve immediately with the remaining crema on the side for dipping.

For extra crispy skin, pat the drumsticks dry with paper towels before marinating.
Adjust the amount of jalapeño in the crema to suit your spice preference. Remove the seeds and membranes for a milder flavor.
The green crema can be made ahead of time and stored in the refrigerator for up to 2 days.
