Add the apples and cinnamon to the skillet. Cook and stir until the apples are crisp-tender and starting to brown, 15 to 18 minutes. Remove from heat. (20 minutes)

If the top is browning too quickly, tent the skillet with foil during the last 10-15 minutes of baking.
