Place beef in a roasting pan or large casserole dish. Fill the dish with about 1/2 inch of water, stir in apple juice concentrate, and soy sauce. Make several small slits in roast and stuff with garlic. Season with onion soup mix. Cover with aluminum foil or a lid. (15 minutes)

Bake in the preheated oven for 2 hours. Remove from the oven, add potatoes and carrots. Cover, and continue to cook until roast is fork tender, about 2 hours more. (2 hours 10 minutes)
For an even richer flavor, sear the beef chuck roast on all sides in a hot pan before placing it in the roasting pan. This will add a beautiful crust and deepen the overall taste of the dish.
