Sear the Pork: Add pork to the pot, increase heat to medium-high, and cook, stirring occasionally, until the pork is starting to brown, about 3 to 5 minutes. (5 minutes)

Simmer the Curry: Add the blanched bamboo shoots, coconut milk, and sliced red bell pepper to the pot. Bring the mixture to a simmer, then reduce heat to low.

Season and Simmer: Season with sugar and salt. Simmer gently for 10 minutes, allowing the flavors to meld. (10 minutes)

Infuse with Lime Leaves: Stir in the thinly sliced makrut lime leaves and cook for 1 more minute, infusing the curry with their distinctive aroma. (1 minute)

Final Seasoning: Season the curry with fish sauce, adjusting to taste.

Finish and Serve: Stir in the fresh Thai basil just before serving. Serve hot with plenty of jasmine rice.

For a vegetarian option, substitute the pork with firm tofu. Press the tofu to remove excess water before adding it to the curry.
Adjust the amount of green curry paste according to your spice preference. Start with 3 tablespoons and add more if needed.
Fresh Thai basil is essential for the authentic flavor of this dish. If you can't find it, you can substitute it with regular basil, but the flavor will be slightly different.
Serve with jasmine rice.
