Follow The Directions

01

Step

In a large, heavy-bottomed saucepan, combine the chopped apples, cane sugar, water, cranberries, and red wine vinegar. (5 minutes)

02

Step

Bring the mixture to a boil over medium-high heat, stirring occasionally to dissolve the sugar. (10 minutes)

03

Step

Once boiling, reduce the heat to low and simmer gently until the cranberries begin to burst and soften, about 20 minutes, stirring occasionally.

04

Step

Stir in the chopped toasted walnuts, crystallized ginger, and freshly grated nutmeg. (2 minutes)

05

Step

Continue to simmer the relish, stirring frequently, until the apples are tender and the flavors have melded together beautifully, about 10 to 15 minutes more. The relish should thicken slightly. (15 minutes)

06

Step

Remove the saucepan from the heat and allow the relish to cool to room temperature. (60 minutes)

07

Step

Once cooled, transfer the relish to clean jars, seal tightly, and refrigerate. The relish will continue to thicken as it chills.

For a deeper flavor, consider adding a cinnamon stick or a star anise to the relish while it simmers; remove before jarring.
Toasting the walnuts enhances their flavor and adds a pleasant crunch to the relish. Toast them in a dry skillet over medium heat until fragrant, about 5-7 minutes, stirring frequently.
The relish can be stored in the refrigerator for up to 2 weeks or frozen for longer storage.
