Step

In a medium saucepan, combine water and sugar. Bring to a gentle boil over medium heat, stirring constantly until the sugar is completely dissolved. Remove from heat and allow to cool to room temperature. (Approximately 15 minutes)

In a high-powered blender, combine the cooled sugar syrup, avocados, lime juice, and sea salt. Blend until the mixture is exceptionally smooth and creamy. (Approximately 2-3 minutes)

Carefully pour the avocado mixture into ice pop molds, filling each mold to just below the top. (Approximately 5 minutes)

Place the filled molds in the freezer for approximately 2 hours, or until the paletas are partially frozen but still soft enough to insert wooden sticks. Insert a wooden stick into the center of each paleta.

Return the molds to the freezer and continue freezing for at least 12 hours, or preferably overnight, until the paletas are completely firm.

For a richer flavor, consider using full-fat coconut milk instead of water.
Adjust the amount of lime juice to your preference. If you like a tangier paleta, add a little more lime juice.
Ensure your avocados are perfectly ripe for the best flavor and creamiest texture.
To easily release the paletas from the molds, run the molds briefly under warm water before gently pulling them out.
