Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

In a large, deep skillet or Dutch oven, cook the bacon over medium-high heat until crispy and golden brown. (10-12 minutes) Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate, reserving the rendered bacon fat in the skillet.

Add the butter to the reserved bacon fat in the skillet and melt over medium-high heat. (2 minutes) Add the sliced onion and cook, stirring occasionally, until softened and deeply caramelized, about 10 to 15 minutes. (15 minutes) Add the minced garlic and sliced mushrooms and cook for another 3 to 5 minutes, until the mushrooms are tender and have released their moisture.

Pour the white wine into the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan. (3 minutes) Allow the wine to reduce slightly, about 2-3 minutes, then remove from the heat.

Place the seasoned stuffing cubes in a large mixing bowl. Pour the vegetable and wine mixture over the stuffing cubes. Add the chicken stock, a little at a time, tossing gently to ensure the cubes are evenly moistened but not soggy. (5 minutes)

Gently fold in the drained oysters and the cooked bacon into the stuffing mixture. Season with sea salt and freshly ground black pepper to taste.

Transfer the stuffing to a 9x13 inch baking dish, or a similar-sized casserole dish. (2 minutes)

Bake in the preheated oven for 25 to 30 minutes, or until golden brown on top and heated through. (30 minutes)

Remove from the oven and let rest for 5-10 minutes before serving. Garnish with fresh chopped parsley, if desired.

For a richer flavor, use a combination of butter and olive oil when sautéing the vegetables.
If using fresh oysters, shuck them carefully and reserve the oyster liquor. Add the liquor to the chicken stock for an extra layer of flavor.
To prevent the stuffing from drying out during baking, cover the dish with aluminum foil for the first 15 minutes, then remove the foil for the remaining baking time.
This stuffing can be prepared ahead of time. Assemble the stuffing in the baking dish, cover tightly with plastic wrap, and refrigerate for up to 24 hours. Add an extra 10-15 minutes to the baking time if baking from cold.
Feel free to customize this recipe with other ingredients such as celery, walnuts, or cranberries.
