Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish. (5 minutes)

To Make Dough: In a food processor, combine flour and salt. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, pulsing until the dough just comes together. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 24 hours. (15 minutes active, 30 minutes inactive)

To Make Filling: In a large bowl, cream together softened butter and brown sugar until light and fluffy. Stir in chopped apples and cinnamon until well combined. (10 minutes)

On a lightly floured surface, roll out the chilled dough into a rectangle approximately 12x18 inches in size. Spread the apple filling evenly over the dough. Starting at the longest side, carefully roll up the dough into a tight log. Cut the log into 2-inch thick slices (dumplings) and place each dumpling, cut-side up, into the prepared baking dish. Brush the tops of the dumplings with beaten egg white and sprinkle with granulated sugar. (20 minutes)

Bake in preheated oven for 30 to 40 minutes, or until the dumplings are golden brown and the apples are tender. Let the dumplings cool in the baking dish for 15 minutes before serving. (30-40 minutes baking, 15 minutes resting)

For an extra touch of flavor, add a splash of vanilla extract to the apple filling.
If you don't have a food processor, you can make the dough by hand using a pastry blender or your fingertips to cut the butter into the flour.
Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce for an extra indulgent treat.
