Preheat your oven to 350 degrees F (175 degrees C). (5 minutes)

Spread the rice evenly over the bottom of a 10x15 inch baking dish. (2 minutes)

Layer the chicken pieces, tomatoes, okra, and bay leaves on top of the rice. (10 minutes)

Pour the chicken broth and reserved tomato juice over the ingredients. Season generously with salt and pepper. (3 minutes)

Cover the baking dish tightly with aluminum foil. (2 minutes)

Bake for 2 hours, or until the chicken is very tender and practically falling off the bone. (120 minutes)

Remove the aluminum foil and bake for another 15 minutes to allow the chicken skin to brown slightly and the sauce to thicken. (15 minutes)

Remove from oven and discard the bay leaves. (2 minutes)

Serve hot in large bowls with plenty of rice and the delicious sauce. (5 minutes)

For an extra layer of flavor, consider browning the chicken pieces in a skillet before layering them in the baking dish.
If the rice absorbs too much liquid during baking, add a bit more chicken broth to the dish.
Feel free to adjust the amount of okra and tomatoes to your liking.
This dish is even better the next day, as the flavors have had time to meld together.
