Follow The Directions

01

Step
5 mins

Preheat your oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step
5 mins

Using tweezers or pliers, carefully remove any pin bones from the salmon fillets. Slice the salmon into 5 equal portions. Place the salmon skin-side down on a sheet of aluminum foil or parchment paper on a baking sheet. Season generously with kosher salt and smoked black pepper. Tent loosely with foil. (5 minutes)

03

Step
10 mins

Bake in the preheated oven for 10 minutes. (10 minutes)

04

Step
10 mins

Remove the baking sheet from the oven and carefully remove the foil tent. Spread a generous layer of basil pesto over each portion of salmon. Sprinkle evenly with finely grated Parmesan cheese. Continue baking, uncovered, until the cheese is melted and lightly golden, about 10 minutes. (10 minutes)

05

Step
2 mins

In a small bowl, whisk together the melted butter and fresh lemon juice. Drizzle this fragrant mixture over the salmon just before serving. (2 minutes)

For an extra layer of flavor, try using a high-quality, freshly made pesto.
If you don't have smoked black pepper, regular black pepper will work, but the smokiness adds a wonderful depth.
Adjust baking time according to the thickness of your salmon fillets. The salmon is done when it flakes easily with a fork.
Serve immediately with your favorite sides. Roasted asparagus or a simple green salad would be excellent choices.
