Preheat oven to 375°F (190°C). Lightly grease a small oven-safe baking dish (approximately 8-inch diameter) with cooking spray. (5 minutes)

In a food processor, combine the shredded cheddar cheese, softened cream cheese, minced garlic, and beer. Process until the mixture is smooth and creamy. (3 minutes)

Add the cornstarch and smoked paprika to the food processor. Pulse a few times until just combined. Avoid over-processing. (1 minute)

Pour the cheese mixture into the prepared baking dish, spreading it evenly. Sprinkle a pinch of smoked paprika over the top for added color and flavor. (2 minutes)

Bake in the preheated oven for 30-35 minutes, or until the dip is bubbly and golden brown around the edges. (35 minutes)

Remove from the oven and let cool slightly before serving with Pretzel Crisps. (5 minutes)

For a smoother dip, ensure the cream cheese is fully softened.
Experiment with different types of beer to customize the flavor profile. Stouts and IPAs will impart a more pronounced beer flavor.
If you don't have a food processor, you can mix the ingredients by hand, ensuring the cream cheese is very soft and everything is well combined.
The dip can be prepared ahead of time and refrigerated until ready to bake. Add about 10 minutes to the baking time if baking from cold.
Try serving with other dippers such as carrot sticks, celery sticks, or apple slices.
