For best results, use perfectly ripe but firm mangoes. Overripe mangoes will become mushy. If you prefer a milder salsa, remove the seeds and membranes from the jalapeño before mincing. Fresh corn kernels, cut directly from the cob, will provide the best flavor, but frozen corn (thawed) is a convenient substitute. This salsa can be made up to 24 hours in advance. The flavors will continue to develop as it sits in the refrigerator. Consider adding a pinch of cumin or a dash of hot sauce for an extra layer of flavor.
