For an extra soft crust, brush with milk instead of butter after baking. If your kitchen is cold, place the dough in a slightly warmed oven (turned off) to rise. Ensure the water used for activating the yeast is not too hot, as this can kill the yeast. A stand mixer with a dough hook can be used for kneading.
