In a separate bowl, whisk together the sour cream and eggs until smooth. Gradually fold in the flour mixture until just combined, being careful not to overmix. Pour the custard batter evenly over the blueberries in the crust. (5 minutes)

In a separate bowl, combine the remaining 1/2 cup of all-purpose flour and brown sugar. Cut in the cold, cubed butter using a pastry cutter or two knives until the mixture resembles coarse crumbs. (8 minutes)

Scatter the crumb topping evenly over the custard layer in the pie. (2 minutes)

Bake in the preheated oven for 50 to 55 minutes, or until the custard is set and the topping is golden brown. A toothpick inserted into the center should come out mostly clean. (55 minutes)

Transfer the pie to a wire rack and let it cool completely before slicing and serving. This allows the custard to set fully. (60 minutes)

For a richer flavor, use full-fat sour cream.
If the crust edges begin to brown too quickly, cover them with foil or a pie shield during the last 15-20 minutes of baking.
Serve chilled or at room temperature with a dollop of whipped cream or a scoop of vanilla ice cream.
