For an extra layer of flavor, try adding a tablespoon of Dijon mustard along with the brown mustard. If you don't have red potatoes, Yukon Gold potatoes or even russet potatoes (peeled) will work well. For a brighter flavor, add a squeeze of fresh lemon juice or a splash of white wine vinegar. Feel free to customize the herbs to your liking. Chives, tarragon, or celery seed are all great additions. Potato salad is best served cold, but can also be enjoyed at room temperature. Be sure to keep it refrigerated when not serving.
