Step

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish. Bring a pot of lightly salted water to a boil. (5 minutes)

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and bell pepper, cooking until softened. (3-5 minutes). Stir in the quartered andouille sausage and shrimp. Cook until shrimp turns pink, and then remove from heat. (2-3 minutes)

Add penne to boiling water and return to a boil. Cook pasta uncovered, stirring occasionally. (6 minutes)

Using a slotted spoon, transfer about half of the pasta to the skillet. Transfer remaining pasta to prepared casserole dish. Reserve 1/2 cup pasta water.

In a saucepan, melt 1 tablespoon of butter over medium heat and whisk in flour. Add the garlic and Cajun seasoning. (1 minute). Whisking constantly, slowly pour in milk, half and half, and reserved pasta water until sauce is smooth and bubbly. (2-3 minutes). Stir in the Alouette cheese and Parmesan cheese, allowing it to melt. (1-2 minutes)

Pour half of the sauce over the pasta in the casserole dish. Transfer the sausage and shrimp mixture to the casserole, and gently blend all ingredients with a spoon. Pour remaining sauce over the pasta mixture. Cover the casserole dish with foil.

Bake in the preheated oven until heated through and bubbly. (25 minutes). Serve immediately.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sauce.
Ensure the shrimp is cooked through but not overcooked to maintain its tenderness.
Feel free to adjust the amount of Cajun seasoning to your preferred level of spice.
