In a heavy-bottomed saucepan, whisk together apple cider vinegar, apple cider, dark brown sugar, mustard seed, Dijon mustard, tomato paste, salt, pepper, and smoked pork neck bones.

Place the saucepan over medium heat and bring to a simmer. (5 minutes)

Reduce the heat to low and gently simmer, uncovered, until the sauce thickens slightly and the flavors meld together. Be sure to skim any foam that rises to the surface and discard. (30-40 minutes)

Remove the saucepan from the heat. Carefully remove and discard the smoked pork neck bones.

Allow the sauce to cool slightly before using. It can be used immediately or cooled completely to room temperature and stored in an airtight container in the refrigerator for up to 1 week.

For a smoother sauce, consider straining it through a fine-mesh sieve after simmering.
If you prefer a spicier sauce, add a pinch of red pepper flakes or a dash of your favorite hot sauce.
This sauce is excellent with pulled pork, grilled chicken, or even drizzled over roasted vegetables.
