Follow The Directions

01

Step

Soak the Noodles: Place rice noodles in a large bowl and cover with hot water. Let them soak until softened, approximately 10 minutes. Drain thoroughly.

02

Step

Prepare the Sauce: In a large saucepan over medium heat, whisk together sugar, water, lime juice, soy sauce, fish sauce, and tamarind concentrate. Simmer gently, stirring occasionally, until the sauce thickens slightly, about 3-5 minutes.

03

Step

Cook the Noodles: Heat peanut oil in a large skillet over medium heat. Add minced garlic and stir until fragrant, about 30-60 seconds. Add the eggs and cook, stirring, until almost set, around 2-3 minutes. Introduce the drained noodles to the skillet, then pour in half of the prepared soy-tamarind sauce. Continue cooking and stirring until the noodle mixture is thoroughly heated, adding more sauce as needed, approximately 2-3 minutes. Season with paprika and chili powder to your preference.

04

Step

Assemble the Salad: On a serving platter or individual bowls, arrange a bed of chopped lettuce and drizzle with flaxseed oil. Top with the flavorful noodle mixture. Garnish generously with fresh bean sprouts, chopped green onion, fresh cilantro, and chopped peanuts. Serve immediately with lime wedges on the side.

For a richer flavor, consider using dark brown sugar instead of white sugar in the sauce.
Adjust the amount of chili powder to control the spice level according to your taste.
Toasted sesame oil can be substituted for flaxseed oil for a nuttier flavor.
Ensure the noodles are not overcooked during the soaking process to prevent a mushy texture.
