Follow The Directions

01

Step

In a blender, combine the minced onion, chopped cilantro, minced jalapeno pepper, minced garlic, olive oil, lime juice, Mexican beer, tequila, black pepper, and cumin.

02

Step

Blend until the marinade is smooth and well combined. (2 minutes)

03

Step

Place your fish or shrimp in a non-reactive dish or resealable bag.

04

Step

Pour the marinade over the fish or shrimp, ensuring it is evenly coated.

05

Step

Marinate in the refrigerator for up to 2 hours. (2 hours)

06

Step

Remove from the refrigerator and grill.

For a milder flavor, remove the seeds and membranes from the jalapeno before mincing.
Do not marinate seafood for longer than 2 hours, as the lime juice can begin to 'cook' the fish and affect its texture.
This marinade is also excellent for chicken or pork.

Be careful not to marinate the shrimp for too long. I left it for 3 hours, and it was a little too soft.

  • Jerod Heathcote

I used this marinade on some cod, and it was the best cod I've ever made!

Next time, I'll try adding a little bit of honey to balance the acidity.
