Follow The Directions

01

Step

Preheat & Prep: Preheat your oven's broiler. Line a baking sheet with parchment paper. (5 minutes)

02

Step

Zucchini Prep: Place zucchini spirals in a colander. Sprinkle with 1 teaspoon of sea salt and the Italian herb blend. Toss well to coat. Set the colander over a bowl to allow excess water to drain while you prepare the chicken. (10 minutes)

03

Step

Chicken Prep: Place chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound to an even 1/4- to 1/2-inch thickness. Remove plastic wrap and season both sides of the chicken with salt and pepper. (10 minutes)

04

Step

Sauce Simmer: Gently heat the marinara sauce in a small saucepan over low heat, stirring occasionally. (10 minutes)

05

Step

Sear Chicken: Coat a nonstick skillet with cooking spray and heat over medium-high heat. Cook chicken in the hot skillet until golden brown and cooked through, about 4 to 5 minutes per side. Transfer the seared chicken to the prepared baking sheet. (10 minutes)

06

Step

Sauté Zucchini: In the same skillet, add the zucchini spirals and sauté over medium-high heat, stirring frequently, until tender-crisp, about 3 to 4 minutes. (5 minutes)

07

Step

Assemble: Spoon the warm marinara sauce evenly over each chicken breast. Top each with a slice of fresh mozzarella cheese. (5 minutes)

08

Step

Broil: Place the baking sheet under the preheated broiler and broil until the cheese is melted, bubbly, and lightly golden brown, about 1 to 2 minutes. Watch carefully to prevent burning! (2 minutes)

09

Step

Serve: Divide the sautéed zucchini spirals among serving plates. Top with the broiled chicken Parmesan. Spoon extra warm marinara sauce over the chicken and garnish generously with freshly grated Parmesan cheese. Serve immediately. (5 minutes)

For even more flavor, consider adding a pinch of red pepper flakes to the marinara sauce.
Don't overcook the zucchini! You want it to retain a slight bite.
If you don't have a spiralizer, you can use a vegetable peeler to create zucchini ribbons.
For a richer flavor, use fresh mozzarella instead of pre-shredded.

The broiler step is key to getting the cheese nice and bubbly. Don't skip it!

I used a mandoline to make the zucchini noodles, which was much faster than a spiralizer.
