For an extra layer of flavor, try marinating the chicken in the red wine vinegar, lime juice, and spices for at least 30 minutes before cooking.
Adjust the amount of chipotle pepper to suit your spice preference. A little goes a long way!
Feel free to substitute the mozzarella with your favorite cheese, such as provolone or pepper jack.
If you don't have a blender, you can finely mince the chipotle pepper and whisk it into the mayonnaise by hand.
