Preheat oven to 350°F (175°C). Lightly grease two baking sheets. (5 minutes)
In a large bowl, using an electric mixer, cream together the 6 tablespoons of softened butter and 1/4 cup of granulated sugar until light and fluffy. (3 minutes) Add the egg and beat until smooth, then beat in the corn syrup. (2 minutes)
In a separate small bowl, whisk together the flour and cocoa powder. (1 minute) Gradually beat half of the flour mixture into the butter mixture until just combined, then beat in the remaining flour until a dough forms. (4 minutes)
Lightly flour a clean work surface. Divide the dough in half. Roll each half into a thin rectangle (about 1/8 inch thick). (7 minutes) Use a knife or pastry cutter to cut each rectangle into smaller rectangles, approximately 1x3 inches. (5 minutes)
Place the cookies onto the prepared baking sheets, spacing them about 2 inches apart. (3 minutes) Bake until firm, 10-15 minutes. Let cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely. (20 minutes)

Once the cookies are completely cool, spread about 1/2 teaspoon of filling onto the bottom of half of the cookies. Top with the remaining cookies to create sandwiches. (10 minutes) Lightly dust the filled cookies with additional confectioners' sugar before serving. (2 minutes)
