For a vegetarian option, substitute vegetable broth for the chicken broth. Pumpkin or Hubbard squash can be used as alternatives to butternut squash. A swirl of coconut milk can replace the light cream for a dairy-free version. If you don't have fresh parsley, dried parsley will also work - use about 1 teaspoon. Adjust the amount of red pepper flakes to control the level of spice.
