A hearty and comforting casserole that layers savory ground beef with sweet cornbread and sharp cheddar. Perfect for a casual dinner or potluck, this dish is sure to please a crowd. The golden-brown cornbread topping adds a touch of sweetness that complements the savory beef filling.
In a large skillet, heat over medium-high heat. Cook and stir ground beef until browned and crumbly (5-7 minutes). Drain and discard any excess grease. Add chopped onion to the skillet and cook until softened (about 5 minutes).
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine cornbread mix, milk, and eggs. Stir in creamed corn until well combined.
Spread the cooked beef mixture evenly in the bottom of a baking dish. Sprinkle shredded Cheddar cheese generously over the beef. Pour the cornbread batter evenly over the cheese layer.
Bake in the preheated oven until the cornbread is golden brown and a toothpick inserted into the center comes out clean (17-22 minutes). Remove from oven and spread butter over the top of the cornbread. Let cool for 5 minutes before cutting and serving.
