For a spicier kick, add a pinch of cayenne pepper to the chicken mixture. To prevent the tortillas from tearing, don't overfill them. Feel free to substitute other cheeses, such as cheddar or pepper jack, for the Monterey Jack. These enchiladas can be assembled ahead of time and refrigerated for up to 24 hours before baking. Just add a few extra minutes to the baking time. Use a good quality enchilada sauce to really make this dish amazing!
