If you don't have Cajun seasoning, you can use a blend of paprika, cayenne pepper, garlic powder, onion powder, and oregano. Fresh crawfish is best, but frozen crawfish tails can be used in a pinch. Be sure to thaw them completely before cooking. To prevent the pasta from sticking together, toss it with a little olive oil after draining. If the sauce is too thick, add a splash of milk or cream to thin it out.
