Add minced shallot and garlic to the same skillet. Cook, stirring frequently, until fragrant and softened, about 30 seconds. Add orzo and stir to coat with the flavorful oil mixture. (2 minutes)

Stir in chicken broth, milk, and whipping cream, ensuring all ingredients are well combined. Add sun-dried tomatoes, distributing them evenly throughout the orzo mixture. Nestle the entire Boursin cheese wheel into the center of the orzo. Return the chicken to the skillet, arranging it artfully atop the orzo. Cover the skillet tightly with a lid or aluminum foil. (5 minutes)

Bake in the preheated oven until the orzo is tender and has absorbed most of the liquid, and the chicken is cooked through. This should take approximately 40 minutes. An instant-read thermometer inserted into the center of the chicken should register at least 165 degrees F (74 degrees C). If the orzo absorbs the liquid too quickly, add a splash more chicken broth or milk. (40 minutes)

Remove from oven. Gently move the chicken to one side of the skillet. Add the chopped spinach to the orzo and stir until the spinach wilts, about 1 minute. Allow the bake to rest for a few minutes before serving. This allows the sauce to thicken slightly. (3 minutes)

Serve immediately. Garnish with fresh parsley or a sprinkle of parmesan cheese for an elegant touch, if desired.

For a vegetarian version, omit the chicken and add roasted vegetables like zucchini, bell peppers, or mushrooms.
Feel free to experiment with different flavors of Boursin cheese, such as Garlic & Fine Herbs, Basil & Chives, or Cracked Black Pepper.
If you don't have an oven-safe skillet, you can transfer the orzo mixture to a baking dish before baking.
