In a Dutch oven or large pot, melt the butter over medium-high heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook until fragrant, about 30 seconds.

Sprinkle the flour over the onion-garlic mixture. Stir continuously until the flour is fully incorporated, creating a smooth roux.

Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming. Add the chopped broccoli, julienned carrot, and cheese tortellini. Season with salt, pepper, smoked paprika, and turmeric. Stir to combine.

Reduce the heat to medium, cover the pot, and simmer until the broccoli is tender and the tortellini are cooked through, about 15 minutes.

Stir in the heavy whipping cream and shredded Colby cheese until the cheese is completely melted and the soup is creamy and smooth. Serve immediately.

For an even richer flavor, use freshly grated Parmesan cheese as a topping.
Feel free to substitute other vegetables such as spinach, zucchini, or bell peppers.
If you prefer a thicker soup, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the soup during the last few minutes of cooking.
To make this vegetarian, use vegetable broth instead of chicken broth.
