Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt and the macaroni pasta. Carefully lower the eggs into the boiling water. Return to a boil and cook until the pasta is al dente, about 9 minutes. (9 minutes)

Drain the pasta and immediately transfer the eggs to an ice bath to stop cooking. Rinse the pasta with cold water to cool it down and prevent sticking, then drain thoroughly. Transfer the pasta to a large bowl. (5 minutes)

Peel the cooled eggs. Separate the yolks from the whites. Roughly chop the egg whites and add them to the bowl with the pasta. Place the yolks in a separate medium bowl. (8 minutes)

Reserve 2 tablespoons of the sliced green onions for garnish. Add the remaining green onions, chopped celery, carrots, and pickles to the pasta bowl. (5 minutes)

In the medium bowl with the egg yolks, mash them until smooth using a fork. Add the remaining 1/2 teaspoon of salt, mayonnaise, sugar, white vinegar, yellow mustard, and black pepper. Stir until the mixture is creamy and well combined. (3 minutes)

Pour the creamy egg yolk dressing over the pasta mixture. Toss gently but thoroughly until all ingredients are evenly coated. (2 minutes)

Sprinkle the salad with the reserved green onions and paprika for a pop of color and flavor. Serve immediately for the best texture, or refrigerate for at least 30 minutes to allow the flavors to meld. (1 minute)

For an extra burst of flavor, consider adding a dash of hot sauce or a pinch of cayenne pepper to the dressing.
If you prefer a tangier salad, increase the amount of white vinegar to taste.
