For a richer, more intense flavor, try lightly toasting the spices (except the sugars and salt) in a dry skillet over medium heat for a few minutes before grinding and combining. Be careful not to burn them! Adjust the amount of cayenne pepper to suit your heat preference. Start with 1/2 teaspoon and add more to taste. This rub is excellent on pork ribs, but also works well on chicken, beef brisket, or even roasted vegetables. Apply the rub generously to the ribs at least 30 minutes before cooking, or preferably overnight, to allow the flavors to penetrate the meat.
