In a medium-sized bowl, meticulously combine all ingredients: smoked paprika, light brown sugar, dark brown sugar, granulated white sugar, sea salt, black pepper, garlic powder, iodized salt, onion powder, cumin, and cayenne pepper. (Approximately 2 minutes)

Whisk vigorously until the mixture is homogenous, ensuring there are no clumps of brown sugar or spices. The final texture should be uniformly fine and easily spreadable. (Approximately 3 minutes)

Store the rib rub in an airtight container in a cool, dark place until ready to use. It can last for several months without losing its potency. (Storage: Indefinite)

For a richer, more intense flavor, try lightly toasting the spices (except the sugars and salt) in a dry skillet over medium heat for a few minutes before grinding and combining. Be careful not to burn them!
Adjust the amount of cayenne pepper to suit your heat preference. Start with 1/2 teaspoon and add more to taste.
This rub is excellent on pork ribs, but also works well on chicken, beef brisket, or even roasted vegetables.
Apply the rub generously to the ribs at least 30 minutes before cooking, or preferably overnight, to allow the flavors to penetrate the meat.
