For a richer flavor, consider using a combination of dark and light meat ground turkey. To prevent the meatloaf from drying out, place a pan of water on the lower rack of the oven while baking. If you don't have V8 juice, tomato juice works as a good substitute. The meatloaf can be prepared a day ahead. Just cover and refrigerate before baking. For extra flavor, try adding a pinch of red pepper flakes to the vegetable mixture while sautéing.
