Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish with cooking spray. (5 minutes)

Bring a large pot of salted water to a rolling boil. Add rotini pasta and cook until al dente, about 8 minutes. Drain well and transfer to the prepared baking dish. (10 minutes)

In a large saucepan, melt butter over medium heat. Add onions, celery, and bell pepper; cook, stirring occasionally, until softened, about 5 minutes. (8 minutes)

Stir in milk, cream of mushroom soup, poultry seasoning, salt, and pepper. Bring to a simmer over medium-low heat, stirring constantly, about 5 minutes. Add shredded chicken and 1/2 cup Cheddar cheese; stir until cheese is melted and incorporated. Remove from heat and pour evenly over the rotini. (10 minutes)

Sprinkle remaining 1/2 cup Cheddar cheese over the top. Bake in preheated oven until golden brown and bubbly, about 25 minutes. Let stand for 5-10 minutes before serving. (35 minutes)

For an extra layer of flavor, sauté a clove or two of minced garlic with the onions, celery, and bell pepper.
Feel free to substitute other cheeses, such as mozzarella, provolone, or Parmesan, for the Cheddar.
If you don't have rotisserie chicken, you can use leftover cooked chicken or quickly poach 2-3 chicken breasts and shred them.
To prevent the pasta from drying out, you can add a splash of chicken broth or milk to the sauce before baking.
