For a deeper molasses flavor, use dark molasses. Store cooled gingersnaps in an airtight container at room temperature for up to a week. Feel free to adjust the spices to your liking. A pinch of ground cloves or nutmeg would also be delicious. For a chewier cookie, slightly underbake them.
