Roll the dough into 1-inch balls. Pour the remaining 1/2 cup of sugar into a small bowl, and roll each ball in the sugar to coat. Place the sugared dough balls 2 inches apart on the prepared baking sheets. (10 minutes)

For a deeper molasses flavor, use dark molasses.
Store cooled gingersnaps in an airtight container at room temperature for up to a week.
Feel free to adjust the spices to your liking. A pinch of ground cloves or nutmeg would also be delicious.
For a chewier cookie, slightly underbake them.
