For a richer flavor, toast the nuts and coconut flakes in a dry skillet over medium heat for a few minutes before adding them to the oat mixture. Watch carefully to prevent burning. Feel free to experiment with other dried fruits, such as raisins, chopped apricots, or cherries. Add a tablespoon of chia seeds or flaxseed meal to the oat mixture for an extra boost of nutrients. The granola will crisp up as it cools. Be sure to let it cool completely before storing to prevent it from becoming soggy. Serve with your favorite yogurt, milk, or as a topping for ice cream. It's also delicious on its own as a trail mix!
